At Wilson’s of York Butchers we provide extremely good quality meat, all of which is sourced locally and butchered in house.
BEEF
Locally reared and matured for full flavour and tenderness. All cuts. We also have a Dry Ageing Cabinet where our ribs of beef are matured for up to 42 days
LAMB
Locally reared matured for full flavour and tenderness. All Cuts.
PORK
Locally reared. All cuts
BACON
British and sourced locally. We also cure our own bacon.
SAUSAGES
Made inhouse and by our butchers, using only the best ingredients. Regular flavours: Plain, Lincolnshire. Farmhouse. Pork and Leek, Tomato, Cumberland.
Keep a close eye on our Facebook and Instagram pages for weekend “guest” sausage flavours, such as Chili, Lime, Mango and Coconut, Toulouse etcetera.
We also produce our very own Nduja smoked pork sausage. Great for livening up a chilli, pizza, or pasta dishes. Exceedingly popular.
Poultry
British and sourced locally. Free Range also available on request.
Venison
British and sourced locally.
Game
Locally sourced when in season. Pheasant, Partridge, Pigeon, Rabbit, etcetera, upon request
Cold Cuts
Cooked inhouse; Ham, Beef, Corned Beef, Turkey, Tongue, and Belly Pork (warm if you’re lucky).
Burgers
Made inhouse by your butcher. Available all year round:

BBQ
Koftas, kebabs, ribs, and more. A range of marinades are also available to pep up your steaks or chicken thighs.
Many other products are available weekly, including Chicken Kiev, Lamb Pinwheels, Meatballs in Tomato Sauce, Liver and Onions, Black Pudding, Dripping, Stock and Gravy, Savoury Duck and Potted Meat.
